Apple Pie Ice Cream (Print-Friendly Version)

# Ingredients:

→ Tortillas and Filling

01 - 8-10 tortillas, 5-inch diameter
02 - 1 tbsp unsalted butter
03 - 2 Granny Smith apples, peeled, cored, and chopped
04 - 2 tsp fresh lemon juice
05 - 1/4 cup granulated sugar
06 - 1 tsp ground cinnamon
07 - 1 large egg, beaten

→ Frying and Coating

08 - 4 cups vegetable oil
09 - 1/4 cup cinnamon sugar (1/4 cup granulated sugar mixed with 1 tsp cinnamon)

→ Ice Cream

10 - 1 pint vanilla ice cream

# Steps:

01 - Cut 4-5 circles from each tortilla using a circular cookie cutter until you have 24 total.
02 - Chop apples into cubes and mix them with lemon juice, sugar, and cinnamon.
03 - Sauté the apple mixture in a frying pan over medium heat with butter until softened.
04 - Place a spoonful of the apple mixture in the middle of a tortilla circle. Add egg wash to the edges of the circle, place another circle on top, and seal the edges with a fork.
05 - Add oil to a frying pan or deep fryer and heat to 350°F.
06 - Deep fry the assembled pies in the hot oil for 2-3 minutes, moving them with a slotted spoon, until evenly browned.
07 - Remove the pies and place them on a paper towel-lined plate. Dip each pie in the cinnamon sugar mixture while still warm.
08 - Allow the pies to cool completely. Scoop vanilla ice cream onto one pie and press another pie on top to create a sandwich. Serve and enjoy.
