Cut 4-5 circles from each tortilla using a circular cookie cutter until you have 24 total.

Chop apples into cubes and mix them with lemon juice, sugar, and cinnamon.

Sauté the apple mixture in a frying pan over medium heat with butter until softened.

Place a spoonful of the apple mixture in the middle of a tortilla circle. Add egg wash to the edges of the circle, place another circle on top, and seal the edges with a fork.

Add oil to a frying pan or deep fryer and heat to 350°F.

Deep fry the assembled pies in the hot oil for 2-3 minutes, moving them with a slotted spoon, until evenly browned.

Remove the pies and place them on a paper towel-lined plate. Dip each pie in the cinnamon sugar mixture while still warm.

Allow the pies to cool completely. Scoop vanilla ice cream onto one pie and press another pie on top to create a sandwich. Serve and enjoy.
