Flatten ground chuck in a pan, season with salt, pepper, and garlic. Refrigerate until ready to cook.

Cook chopped bacon in a skillet over medium heat. Remove bacon and discard half of the rendered grease.

Add diced onion to the skillet with remaining bacon grease. Cook for 10 minutes until softened. Add minced garlic and cook for another 4-5 minutes.

Return the cooked bacon to the skillet. Cook for 1-2 minutes. Add brown sugar, bourbon, apple cider vinegar, and maple syrup. Simmer for 10-15 minutes until thickened. Transfer to a jar and set aside.

Heat a griddle to medium temperature and grease with tallow or cooking spray. Cook each patty for 4-6 minutes per side. Season the backside before flipping. Add American cheese 2 minutes before the patties are finished cooking.

Toast slider buns on the griddle. Assemble sliders with cooked patties, bacon jam, and toasted buns. Cut and serve immediately.
