Banana Pancakes for One (Print-Friendly Version)

# Ingredients:

01 - 1/3 cup flour plus 2 extra tablespoons.
02 - 1 ripe banana.
03 - Pinch of salt to taste.
04 - 1 egg.
05 - 2 teaspoons of brown sugar.
06 - 1 tablespoon olive oil.
07 - 1 teaspoon of baking powder.
08 - 1/8 teaspoon baking soda.
09 - 2 tablespoons buttermilk.

# Steps:

01 - In a bowl, mash up the banana. Mix in the egg, olive oil, sugar, and buttermilk.
02 - Toss in flour, baking powder, baking soda, and a pinch of salt. Stir until no lumps remain.
03 - Warm up a pan on medium heat, then turn it down a notch. Lightly grease the surface.
04 - Scoop about 1/3 cup batter for each pancake. Wait for bubbles on top, then flip and let it finish cooking.
