Set your oven to 350°F and start preheating. Grease your muffin pan or use paper liners to keep things non-stick.

In a bowl, whisk together the mashed bananas, egg, vanilla, honey, and milk until everything is smooth and blended.

Stir in the oats, baking powder, cinnamon, and salt until the mixture looks evenly combined.

Carefully fold in your blueberries. Don’t overmix!

Spoon the batter into your muffin tins, filling them about 3/4 full. Toss a few extra berries on top if you feel fancy. Bake for 25-30 minutes, and check with a toothpick—it’s done if it comes out clean.

Let the muffins cool right in the pan for 5-10 minutes, then move them to a cooling rack. They need to be totally cool before you can store them in a container in the fridge.
