Blueberry Banana Oatmeal Bites (Print-Friendly Version)

Loaded with bananas and fresh blueberries, these baked oatmeal cups are perfect for quick breakfasts or simple snacks.

# Ingredients:

→ Dry Ingredients

01 - 3 cups of old-fashioned oats
02 - 2 teaspoons of baking powder
03 - 1 teaspoon of cinnamon
04 - Half a teaspoon of salt

→ Wet Ingredients

05 - 1 cup of ripe bananas, mashed (about 2-3 bananas)
06 - 1 large egg
07 - 1 teaspoon of vanilla extract
08 - 2/3 cup almond milk or any milk you prefer
09 - Half a cup of honey or maple syrup

→ Mix-in

10 - 1 and a half cups of blueberries (can be fresh or frozen)

# Steps:

01 - Set your oven to 350°F and start preheating. Grease your muffin pan or use paper liners to keep things non-stick.
02 - In a bowl, whisk together the mashed bananas, egg, vanilla, honey, and milk until everything is smooth and blended.
03 - Stir in the oats, baking powder, cinnamon, and salt until the mixture looks evenly combined.
04 - Carefully fold in your blueberries. Don’t overmix!
05 - Spoon the batter into your muffin tins, filling them about 3/4 full. Toss a few extra berries on top if you feel fancy. Bake for 25-30 minutes, and check with a toothpick—it’s done if it comes out clean.
06 - Let the muffins cool right in the pan for 5-10 minutes, then move them to a cooling rack. They need to be totally cool before you can store them in a container in the fridge.

01 - You can stick these in the fridge, and they’ll last for about 5 days.
02 - If you’re working with frozen blueberries, just add a little extra bake time.
