Holiday Goat Cheese Truffles (Print-Friendly Version)

Goat cheese combined with honey, then rolled in cranberries and nuts. Great for parties and easy to make ahead.

# Ingredients:

→ Cheese Mixture

01 - 1 cup cream cheese, softened
02 - 1 cup softened goat cheese

→ Flavoring

03 - 1/4 cup honey (split into halves)
04 - 1/8 teaspoon salt
05 - 1 and 1/2 teaspoons ground cinnamon

→ Outer Layer

06 - 1/3 cup finely chopped parsley leaves
07 - 3/4 cup dried cranberries, diced
08 - 1 and 1/3 cups pecan pieces, split in half

# Steps:

01 - Mix together cream cheese, goat cheese, cinnamon, salt, and 2 tablespoons of honey until smooth and fluffy. Stir in 1/3 cup pecans at the end.
02 - In a small dish, combine parsley, the remaining pecans, and the chopped cranberries.
03 - Shape the cheese mixture into small, round balls (about 1-inch each) and roll them in the parsley-cranberry coating.
04 - Put the coated balls on a non-stick surface and let them chill for a minimum of 20 minutes in the fridge before serving.

# Notes:

01 - They stay firm and fresh if served cold.
02 - You can freeze them for up to three months.
03 - Avoid making balls larger than two inches across.
