Creamy Chicken Pasta (Print-Friendly Version)

Chicken tossed with whole wheat pasta in a creamy ricotta mixture. Add fresh greens for a light, healthy twist.

# Ingredients:

01 - 2 cups of kale or spinach.
02 - Fresh parsley or basil to garnish.
03 - 1 teaspoon of Italian herbs.
04 - 3 cloves of garlic, minced.
05 - 1/4 teaspoon of crushed red pepper.
06 - 1/2 cup of chicken stock.
07 - 1/2 cup of heavy cream (optional).
08 - 12 ounces of wheat pasta.
09 - 2 tablespoons of olive oil.
10 - 1/2 cup Parmesan, shredded.
11 - 1 cup of ricotta cheese.
12 - 1 pound of chicken, cut into small chunks.

# Steps:

01 - Get your pasta cooked till just firm. Save half a cup of the water before draining.
02 - Heat the oil and cook the seasoned chicken, stirring occasionally, until browned. This should take 6-8 minutes.
03 - Toss garlic into the pan, then mix in the cheeses, stock, and cream. Add the spices and stir till it's silky smooth.
04 - Mix the chicken and cooked pasta into the sauce. Add pasta water if it’s dry. Stir in greens until they soften.

# Notes:

01 - Thin out the sauce using pasta water.
02 - Heavy cream makes it richer but isn’t required.
03 - Any type of leafy greens will do.
