Garlic Chicken Delight (Print-Friendly Version)

Tender chicken flavored with garlic, combined with spinach and broccoli in a single pan. A quick and healthy dinner ready in half an hour.

# Ingredients:

→ Protein

01 - 2 big chicken breasts (boneless, skinless, about 1 lb), chopped into small chunks

→ Veggies & Aromatics

02 - 3 cups spinach leaves, fresh
03 - 2 cups of broccoli florets
04 - 4 minced garlic cloves

→ Flavorings & Liquids

05 - 1/2 tsp red chili flakes (optional if you like heat)
06 - 1/2 tsp salt (taste and tweak if needed)
07 - 1/4 tsp ground black pepper
08 - 1 tbsp fresh lemon juice
09 - 1/4 cup chicken broth or plain water
10 - 2 tablespoons olive oil

→ Toppings

11 - 1/4 cup Parmesan cheese, shredded (optional)

# Steps:

01 - Cut chicken into smaller pieces and mince the garlic. Make sure the spinach and broccoli are washed and drained.
02 - Pour a tablespoon of olive oil into a large pan on medium-high heat. Toss in the chicken, sprinkle with pepper and salt, and cook for 6-8 minutes until done and golden (check it reaches an internal temperature of 165°F/74°C). Once done, set it aside.
03 - Using the same pan, add another tablespoon of oil. Put in the broccoli and cook for around 3-4 minutes, just until it softens slightly.
04 - Turn the heat down to medium. Stir in the garlic and spinach with the broccoli. Keep stirring for about 2 minutes, letting the spinach shrink and garlic release its aroma.
05 - Add the cooked chicken back to the pan. Stir in the broth or water, and let it all simmer together for 2-3 minutes to blend the flavors.
06 - Add a squeeze of lemon juice on top and sprinkle Parmesan cheese if you like. Taste and adjust seasoning if needed, then serve right away. It pairs well with pasta, rice, or quinoa.

# Notes:

01 - Try swapping broccoli for zucchini or asparagus for a different crunch.
02 - Use leftover or store-bought rotisserie chicken to save time.
03 - For a no-dairy option, skip the Parmesan or go for a vegan-friendly substitute.
