Cut chicken into smaller pieces and mince the garlic. Make sure the spinach and broccoli are washed and drained.

Pour a tablespoon of olive oil into a large pan on medium-high heat. Toss in the chicken, sprinkle with pepper and salt, and cook for 6-8 minutes until done and golden (check it reaches an internal temperature of 165°F/74°C). Once done, set it aside.

Using the same pan, add another tablespoon of oil. Put in the broccoli and cook for around 3-4 minutes, just until it softens slightly.

Turn the heat down to medium. Stir in the garlic and spinach with the broccoli. Keep stirring for about 2 minutes, letting the spinach shrink and garlic release its aroma.

Add the cooked chicken back to the pan. Stir in the broth or water, and let it all simmer together for 2-3 minutes to blend the flavors.

Add a squeeze of lemon juice on top and sprinkle Parmesan cheese if you like. Taste and adjust seasoning if needed, then serve right away. It pairs well with pasta, rice, or quinoa.
