# Ingredients:

01 - 3 garlic cloves, chopped finely.
02 - 2 teaspoons ginger, chopped into small bits.
03 - 12 ounces of chicken liver, sliced thinly.
04 - 1/2 teaspoon salt for marinating.
05 - 2 teaspoons dry sherry or Shaoxing wine added to marinade.
06 - 1 1/2 teaspoons cornstarch to mix in marinade.
07 - 1 tablespoon light soy sauce for flavor.
08 - 1/4 teaspoon ground black or Sichuan pepper for a kick.
09 - 2 teaspoons sugar for a touch of sweetness.
10 - 1/4 cup chicken broth for added richness.
11 - 1/2 teaspoon dark soy sauce for color.
12 - 2 tablespoons oil (peanut is best) for frying.
13 - 1 tablespoon dry sherry or Shaoxing wine added to sauce.
14 - 1 1/2 teaspoons cornstarch to thicken sauce.
15 - 1 onion, sliced thinly.
16 - 1 bell pepper, cut into thin strips.
17 - 1 teaspoon sesame oil for final touch.

# Steps:

01 - Toss chicken liver with wine, salt, and cornstarch. Use your hands gently to coat everything well.
02 - In a small bowl, stir all sauce ingredients together until smooth and mixed.
03 - Lay liver pieces in a hot pan in one layer. Cook around 1 minute on each side, just until browned and done.
04 - First fry ginger and garlic until you can smell them. Then toss in onions and stir for another minute.
05 - Add liver back to the pan with peppers, stir in sauce, and heat everything until thick. Drizzle sesame oil on top before serving.
