# Ingredients:

01 - 1 large egg
02 - 1 lb ground chicken
03 - 1/2 cup breadcrumbs
04 - 1/4 cup Parmesan cheese, grated
05 - 1/2 cup creamy ricotta cheese
06 - 2 minced garlic cloves
07 - 1 teaspoon of dried basil
08 - 1 teaspoon of dried oregano
09 - A sprinkle of salt and pepper
10 - 2 tablespoons olive oil (to grease)

→ Spinach Alfredo Mixture

11 - 1 cup shredded mozzarella cheese
12 - Salt and pepper to your liking
13 - 1/4 cup fresh parsley, chopped (optional for garnish)
14 - 1/2 cup Parmesan cheese, grated
15 - 1 teaspoon of dried Italian herbs
16 - 1 tablespoon olive oil
17 - 2 minced garlic cloves
18 - 1 cup heavy whipping cream
19 - 3 cups fresh spinach, chopped up

# Steps:

01 - Turn your oven on to 400°F (200°C). Grease a baking tray lightly with olive oil.
02 - In a big bowl, toss in the chicken, ricotta, breadcrumbs, egg, Parmesan, garlic, herbs, salt, and pepper. Stir together gently, just until it’s combined.
03 - Roll the mixture into meatballs about 1 1/2 inches across (you’ll get around 16). Lay them out on the baking tray and bake for 18-20 minutes, till golden brown and fully cooked.
04 - While the meatballs are baking, warm olive oil in a big pan. Toss in garlic and cook for 1 minute, then add spinach. Stir for 2 to 3 minutes till it shrinks down.
05 - Pour in heavy cream, letting it bubble slightly. Let it thick up for about 3-5 minutes. Sprinkle in mozzarella, Parmesan, and Italian herbs. Stir till the cheese melts and the sauce is smooth. Add a pinch of salt and pepper to taste.
06 - Put your baked meatballs into the skillet with the sauce and gently toss to coat them. Let everything simmer for 5-7 minutes so the flavors mix nicely. Add parsley on top if you'd like, and enjoy!
