One Pan Cheesy Smoked Sausage Pasta Skillet (Print-Friendly Version)

Smoked sausage, cheese, and pasta cooked in one-pan with a creamy, spicy sauce for a satisfying family dinner.

# Ingredients:

01 - 1 tablespoon extra virgin olive oil
02 - 1 pound smoked turkey sausage, sliced
03 - 1 cup diced onion (about 1 medium onion)
04 - 1 tablespoon minced garlic (about 2–3 fresh cloves)
05 - 2 cups chicken broth
06 - 10 ounces canned diced tomatoes (with or without chiles, like rotel)
07 - 1/2 cup milk or heavy cream
08 - 8 ounces dry pasta (such as rotini, penne, or farfalle)
09 - Salt and pepper to taste
10 - 1 cup shredded Cheddar-Jack cheese
11 - 1/3 cup sliced scallions for garnish

# Steps:

01 - Add olive oil to a 5-quart saute pan over medium-high heat. Add onions and sausage, and cook until lightly browned. Add garlic and cook for about 30 seconds.
02 - Add chicken broth, canned tomatoes (undrained), milk, pasta, salt, and pepper. Bring the mixture to a boil, cover, and reduce heat to low. Simmer for about 15 minutes, or until pasta is tender and most of the liquid is absorbed.
03 - Turn off heat and stir in 1/2 cup of shredded cheese. Sprinkle the remaining cheese on top and cover the pan for about 5 minutes to allow cheese to melt. Optionally, broil for a couple of minutes to melt the cheese further.
04 - Top with sliced scallions and serve hot.

# Notes:

01 - If there is still a lot of thin liquid left, spoon some out before adding the cheese. You need some liquid to create the sauce.
02 - Leftovers can be stored in an airtight container in the refrigerator for up to 4–5 days.
03 - Freezing is possible, but the cream might break down upon reheating, so it is not recommended.
04 - To reheat, thaw first if frozen, then microwave in 30-second intervals, stirring each time, until hot.
