Preheat the oven to 350°F (175°C) and grease a baking sheet thoroughly. Set it aside.

In a medium bowl, use a fork or masher to completely mash the pinto beans until smooth.

Stir in the cooked quinoa, tomato paste, dried basil, onion powder, garlic powder, salt, and sweetener. Mix until fully combined. Taste the mixture and add more sweetener if necessary.

Roll the mixture into small bite-sized balls. If using cheese, push a small piece into the center of each ball and seal it back up.

Place the balls onto the prepared baking sheet and bake for 30 minutes. For a crispy shell, broil the bites for 1 additional minute at the end.
