01 - 1 cup cooked quinoa
02 - 1 cup canned or cooked pinto beans
03 - 1/2 cup tomato paste
04 - 2 tsp dried basil
05 - 1/2 tsp onion powder
06 - 1/2 tsp garlic powder
07 - 1/2 tsp salt
08 - 1 tsp sweetener of choice
09 - Shredded mozzarella cheese (optional, vegan alternatives acceptable)

# Steps:

01 - Preheat the oven to 350°F (175°C) and grease a baking sheet thoroughly. Set it aside.
02 - In a medium bowl, use a fork or masher to completely mash the pinto beans until smooth.
03 - Stir in the cooked quinoa, tomato paste, dried basil, onion powder, garlic powder, salt, and sweetener. Mix until fully combined. Taste the mixture and add more sweetener if necessary.
04 - Roll the mixture into small bite-sized balls. If using cheese, push a small piece into the center of each ball and seal it back up.
05 - Place the balls onto the prepared baking sheet and bake for 30 minutes. For a crispy shell, broil the bites for 1 additional minute at the end.
