Simple Smoked Sausage Meal (Print-Friendly Version)

An easy skillet dish with smoked sausage, soft potatoes, vibrant peppers, and onions - prepped and cooked in under 30 minutes for a fast, family-friendly meal.

# Ingredients:

→ Main Ingredients

01 - 1 pound of smoky sausages, sliced into thick quarter-inch rounds
02 - 2 pounds of fresh red potatoes, chopped into small cubes about 1 inch big
03 - One large onion, thinly sliced for perfect sweetness while cooking
04 - Sweet red bell pepper, sliced into thin, long strips
05 - Two garlic cloves, finely chopped for an intense flavor boost

→ Seasonings & Oil

06 - 1/4 cup of avocado oil to fry everything up
07 - 1 teaspoon of dried thyme, packed with earthy flavor
08 - 1 teaspoon of bold and smoky paprika
09 - A teaspoon of sea salt for a well-rounded taste
10 - A pinch (1/4 teaspoon) of freshly cracked black pepper
11 - 1 tablespoon of fresh rosemary (or swap it for 1 1/2 teaspoons if dried)
12 - Fresh parsley leaves, chopped and scattered on top

# Steps:

01 - Heat up half the avocado oil in a large pan until it gets a nice shimmer. Add in the sausage slices and cook for roughly 4-5 minutes, letting them brown beautifully on each side. Take the sausage out and keep it ready for later.
02 - Drizzle the rest of the oil into the same pan and toss the potato cubes in. Let them sizzle and get golden for about 5-7 minutes, stirring every few minutes so they cook evenly.
03 - Toss the sliced red peppers and onions into the pan with the potatoes. Let the mixture cook for 5-7 minutes, giving it a good stir every so often to avoid sticking.
04 - Mix in the minced garlic, thyme, paprika, salt, and black pepper. Stir until everything is coated, then reintroduce the golden sausage slices to the pan.
05 - Turn the heat to low and let it all cook gently for another 5-7 minutes. Check that the potatoes are soft inside with crispy edges. Sprinkle the chopped fresh rosemary on top, give it a toss to release the aroma, and, if you'd like, garnish with parsley.

# Notes:

01 - This one-pan meal is cozy, comforting, and ready in around 30 minutes. Perfect for when you're short on time!
02 - To get potatoes cooked just right, cube them evenly into 1-inch pieces.
