Sweet Potato Biscuits (Print-Friendly Version)

Fluffy, buttery biscuits with sweet potato and buttermilk. Perfect for morning or as a comforting side.

01 - 1 1/2 cups baked sweet potatoes, cooled and mashed
02 - 6 tbsp unsalted butter, melted
03 - 1 cup buttermilk
04 - 3 1/4 cups all-purpose flour
05 - 5 tsp baking powder
06 - 1/4 tsp baking soda
07 - 1 tsp salt
08 - 2 tbsp sugar

# Steps:

01 - Preheat oven to 204°C (400°F) and line a baking sheet with parchment paper or a silicone baking mat. Set aside.
02 - In a large bowl, whisk together mashed sweet potatoes, melted butter, and buttermilk until smooth.
03 - Add the flour, baking powder, baking soda, sugar, and salt to the mixture. Stir until just combined.
04 - Turn the dough out onto a lightly floured surface. Sprinkle the top of the dough with flour and knead 10 times, adding more flour as needed to prevent sticking.
05 - Roll the dough out to 1.9 cm (3/4 inch) thickness and cut using round cutters. Place the biscuits on the prepared baking sheet and bake for 15 to 20 minutes, or until golden brown and cooked through.
06 - Serve immediately, optionally with brown sugar cinnamon butter.

01 - Sweet potato puree can be prepared ahead of time and refrigerated for convenience.
