Using a sharp knife or mandoline, peel the bananas and slice them into thin rounds about 1/8 inch thick. Aim for even slices to cook them well.

Combine the sugar with ground cinnamon in a small bowl, stirring until they're evenly blended.

Brush each side of the banana slices lightly with butter or coconut oil. Sprinkle the cinnamon-sugar mix over both sides of the slices.

Lay the prepared banana slices in the air fryer basket, keeping them in one layer without overlapping. Depending on your fryer size, you may need to do this in batches.

Set the air fryer to 300°F (150°C). Cook for 10-15 minutes, flipping the slices after about 5-7 minutes. Start checking them around the 12-minute mark. They're ready when golden brown and a bit crisp. They'll get crunchier as they cool.

Take the chips out of the air fryer and let them cool completely on a wire rack. Once cooled, you can enjoy them right away or keep them in a sealed container for up to three days.
