General Tso Chicken (Print Version)

# Ingredients:

01 - 1 pound of chicken thighs, sliced into small chunks.
02 - 1 teaspoon of minced garlic for the marinade.
03 - 1 teaspoon of grated ginger for the marinade.
04 - 2 teaspoons soy sauce to flavor the marinade.
05 - 1 teaspoon of rice vinegar to balance the marinade.
06 - 1 egg, whisked until smooth.
07 - 2/3 cup of cornstarch for coating.
08 - 1/2 cup of chicken stock.
09 - 2 tablespoons soy sauce for making the sauce.
10 - 2 tablespoons of ketchup for the sauce.
11 - 2 teaspoons of brown sugar to sweeten the sauce.
12 - 2 teaspoons vinegar (rice) for the sauce.
13 - 2 teaspoons of cornstarch for thickening the sauce.
14 - 2 tablespoons of vegetable oil for cooking.
15 - 1 teaspoon of grated ginger for the sauce.
16 - 1 teaspoon of minced garlic for the sauce.
17 - 1 teaspoon of crushed red pepper for a spicy kick.

# Instructions:

01 - Combine the chicken pieces with soy sauce, rice vinegar, garlic, and ginger. Let it sit for half an hour.
02 - Preheat your air fryer to 400°F for 5 minutes. Lightly oil the basket.
03 - Dunk the chicken into the beaten egg, then toss it in cornstarch to fully coat. Shake off any extra starch.
04 - Spread the coated chicken pieces in a single layer in the air fryer basket. Cook them at 400°F for 12-16 minutes, until the internal temperature reaches 165°F.
05 - Stir together chicken stock, soy sauce, ketchup, sugar, vinegar, and cornstarch. Heat oil in a pan and sauté the garlic, ginger, and chili flakes until fragrant. Then pour in the sauce mixture and cook until it thickens.
06 - Toss the cooked chicken pieces with the sauce. Add some sesame seeds and chopped green onions for garnish.

# Notes:

01 - Cook the chicken in portions so the pieces don’t clump or crowd.
02 - If you want a sweeter sauce, just add more sugar.
03 - Double the sauce recipe if you like it extra saucy.
