Healthy Lemon Cod Dish (Print Version)

# Ingredients:

01 - Four cod fillets (about 6 ounces each)

→ Buttery Lemon Topping

02 - 1/4 cup (60g) melted unsalted butter
03 - Two tablespoons of olive oil
04 - Juice of one lemon (around 3 tablespoons)
05 - Three minced garlic cloves
06 - 1 teaspoon lemon zest
07 - 1/2 teaspoon each of paprika and dried thyme (or 1 teaspoon fresh thyme)
08 - Salt and black pepper to your liking

09 - Two tablespoons of parsley, finely chopped
10 - Lemon wedges or slices

# Instructions:

01 - Set your oven to 400°F (200°C). Coat the inside of a baking dish lightly with cooking spray or olive oil.
02 - Combine melted butter, olive oil, lemon juice, garlic, zest, thyme, paprika, salt, and pepper in a small bowl, then whisk it well.
03 - Lay the cod fillets flat in the greased baking dish. Drizzle the sauce generously over them, ensuring each piece is covered.
04 - Cook in the oven for around 12 to 15 minutes. You’ll know the fish is done when it’s an opaque white and flakes apart easily. Timing may vary with thickness!
05 - Top with parsley and lemon slices before serving. Enjoy while warm with your choice of rice, salad, or veggies.

# Notes:

01 - Crank up the heat: Sprinkle in some red pepper flakes if you like it spicy.
02 - Try other fish: Works equally great with haddock, tilapia, or similar white fish.
03 - Leftovers: Keep extras in an airtight container in the fridge and eat within 3 days.
