Banana Peanut Butter Bars (Print-Friendly Version)

Simple, chewy bars with a mix of oats, banana, and creamy peanut butter sweetened naturally with optional add-ins like chocolate.

# Ingredients:

01 - 1/2 cup chocolate chunks
02 - 1/4 teaspoon fine salt
03 - 1/2 teaspoon baking powder
04 - 1 1/4 cups fast-cooking oats
05 - 1 teaspoon pure vanilla
06 - 3 super soft bananas
07 - 1/4 cup creamy unsweetened peanut butter

# Steps:

01 - Set oven to 350°F. Line or lightly oil your pan.
02 - Smash the bananas until there are no chunks left. Stir in the peanut butter and vanilla until smooth.
03 - Stir in the oats, baking powder, and a pinch of salt. Gently mix in about 1/3 cup of the chocolate chunks.
04 - Spread the mix evenly into the pan, sprinkle the rest of the chocolate on top. Bake 25–30 minutes or until a knife comes out clean.
05 - Cool completely before slicing into 6 to 8 portions.

# Notes:

01 - Switch the peanut butter for another nut butter if you'd like.

03 - Extra ripe bananas give it the sweetness you need.
