Quick BBQ Chicken (Print Version)

# Ingredients:

01 - Salt and pepper, as much as you'd like
02 - ½ cup grated cheese
03 - ⅓ cup BBQ sauce (low in sugar)
04 - 5 chicken thighs, boneless and skinless
05 - 1 medium onion, sliced thinly
06 - 1 teaspoon oil (olive)

# Instructions:

01 - Scatter the shredded cheese on top of the skillet mixture. Just cover it up for a couple of minutes until the cheese melts nicely. Serve warm and enjoy.
02 - Once the chicken's cooked completely, grab two forks and pull it apart into pieces right in the pan. Pour in the BBQ sauce and mix it around so the chicken is totally coated.
03 - Grab your chicken thighs and sprinkle both sides with some salt and pepper. Add them to the skillet with the onions. Put the lid on and let it cook over medium-low heat for a few minutes. Then remove the lid and cook until the chicken's all done (165°F) while shifting it around as needed to brown evenly.
04 - Drizzle a little olive oil in your medium skillet and heat it up over medium. Add the onion slices and toss them while they cook for a bit. Give them about 3-4 minutes to soften up and get lightly browned.

01 - Let those onions cook until they’re a deep brown color for more flavor. Be sure to caramelize the chicken slightly too.
