Chicken BBQ Melt (Print Version)

# Ingredients:

→ For the Sandwich

01 - 2 cups of cooked, shredded chicken (use rotisserie chicken for ease)
02 - 1/2 cup BBQ sauce, plus more if you feel like drizzling
03 - 8 slices of bread (try sourdough for the best taste)
04 - 8 slices of cheddar cheese, or a combination of cheddar and mozzarella
05 - 1/2 of a red onion, sliced thin
06 - 2 tablespoons of butter, softened
07 - Optional add-ons: cilantro or pickled jalapeños

# Instructions:

01 - Toss the chicken and BBQ sauce together in a medium bowl until it’s all covered. If you like it saucier, add a little more sauce.
02 - Put 4 slices of bread on your work surface. Layer each one with a slice of cheese first, then spread 1/4 of the BBQ chicken mixture, followed by some onion slices and any extras you’re using. Lay another slice of cheese on top and close the sandwich with another piece of bread.
03 - Rub butter on the outsides of all the sandwiches. Make sure both the top and bottom slices are coated.
04 - Warm up a big skillet over medium heat. Place your sandwiches in the pan with the buttered side down. Let them cook for 3-4 minutes, or until you get that golden-brown color. Flip and cook the other side for another 3-4 minutes. Press them gently so the cheese melts evenly.
05 - Take the sandwiches off the heat. Let them sit for a minute before slicing them in half. Serve right away with any leftover BBQ sauce on the side.

01 - Combining cheddar and mozzarella gives you a great mix of taste and melty texture.
