Set your oven to 400°F (200°C) and let it preheat. Coat a 9x13-inch dish lightly with cooking spray, then set it aside for later.

In a skillet, heat the olive oil over medium-to-high heat. When it’s warm, toss in the chunks of chicken and cook them until they’re crispy and golden-looking on the outside.

Toss the minced garlic into the pan and sauté for about a minute until fragrant. Stir in the BBQ sauce and sprinkle in the salt—about half a teaspoon or to your taste. Cook until the sauce coats the chicken well, is shiny, and looks slightly thicker. Turn off the heat when done.

Place your taco shells upright in the greased dish. Drop about 1-2 spoonfuls of mozzarella cheese into the bottom of each shell to keep them from getting soggy during baking.

Fill each shell by layering in 2-3 spoonfuls of the BBQ-coated chicken. Spread the chicken across the tacos until you’ve used up the mixture.

Layer on the pizza-style toppings like the veggie slices and olives. Use up all the mushrooms, bell peppers, red onions, and remaining mozzarella. End it with a light sprinkle of Italian herbs or a similar seasoning.

Slide the dish into the hot oven and bake for 15 minutes, or until the cheese is fully melted and has a light golden color on top.

Take the tacos out and serve them while they’re warm. Add a dollop of sour cream, guac, salsa, or whatever toppings you feel like!
