Blueberry Cheesecake Bars (Print-Friendly Version)

Soft and creamy bars with sweet blueberry swirls on a crunchy crust. Easy to make and share!

# Ingredients:

→ Blueberry Topping

01 - 1/2 cup granulated sugar
02 - 3 cups of fresh blueberries

→ Crust Base

03 - 6 tablespoons melted butter
04 - 2 tablespoons white sugar
05 - 1 1/2 cups of crushed graham crackers

→ Cheesecake Layer

06 - Two 8-ounce packs of softened cream cheese
07 - 1/2 cup granulated sugar
08 - A teaspoon of vanilla flavoring
09 - Two eggs

# Steps:

01 - In a tiny pot, stir together sugar and blueberries. Cover it up and let it gently cook on low for about 10 minutes. Let it cool before popping it in the fridge for 1-2 hours so it thickens.
02 - Warm your oven to 350°F. Take graham cracker crumbs, sugar, and melted butter, mix them up, and press the mixture into a greased 9x13 pan.
03 - Beat cream cheese with sugar until it's all silky. Add vanilla and mix in eggs one by one, but don’t overdo it. Spread this on the crust evenly.
04 - Drizzle two fat stripes of your chilled blueberry mix down the length of the pan. Lightly swirl with a skewer, but steer clear of the crust at the bottom.
05 - Bake for 40-45 minutes or until the middle sets. Chill in the fridge long enough before slicing it into bars.
