Blueberry Cheesecake Bars (Print Version)

# Ingredients:

→ Blueberry Filling

01 - 3 cups fresh blueberries
02 - 1/2 cup granulated sugar

→ Graham Cracker Crust

03 - 1 1/2 cups of crushed graham crackers
04 - 6 tablespoons of melted butter
05 - 2 tablespoons sugar

→ Cream Cheese Filling

06 - Two 8-ounce packs of softened cream cheese
07 - 1/2 cup of sugar
08 - 1 teaspoon vanilla extract
09 - 2 eggs

# Instructions:

01 - In a small pan, toss together the blueberries with the sugar. Cover it and let it cook gently on low heat for about 10 minutes. Let it cool down, then pop it in the fridge for 1-2 hours until it thickens.
02 - Set your oven to 350°F to preheat. Mix the graham crumbs with melted butter and sugar. Firmly press this mixture into a greased 9x13-inch dish.
03 - Using a mixer, blend the cream cheese and sugar together until smooth. Mix in the vanilla and eggs, adding one egg at a time. Blend just enough to combine everything, then pour over the crust.
04 - Drizzle two thick lines of the chilled blueberry sauce lengthwise along the pan. Use a skewer or chopstick to swirl the sauce gently—don't dig into the crust!
05 - Bake the pan for 40-45 minutes, just until the center sets. Let it cool fully, and refrigerate before slicing the bars.

# Notes:

01 - The blueberry filling can be prepped 1-2 days beforehand.
02 - Store leftovers in the fridge for up to 4 days.
03 - You can also freeze it for as long as a month.
