Get your grill or stovetop griddle heated to medium-high.

Toss together the coleslaw, celery, onion, and blue cheese in a bowl. In another bowl, whisk together the yogurt, mayo, vinegar, and honey to make the dressing. Mix the dressing into the slaw and pop it in the fridge to chill.

Place the hotdogs on the grill and cook them until they’re done just the way you like, turning them regularly for even browning.

Place the brioche buns open-side down on the hot grill for a few minutes to get them nicely toasted.

Fill the buns with some of the slaw first, then place the hotdogs inside, and finish with garnishes like extra blue cheese crumbles, buffalo sauce, and celery leaves.
