Carrot Bars with Frosting (Print-Friendly Version)

Soft spiced carrot bars topped with rich cream cheese frosting. Pineapple and fresh carrots add extra flavor.

# Ingredients:

→ Dry Ingredients

01 - 1/2 teaspoon salt
02 - 1 teaspoon ground cinnamon
03 - 1/2 teaspoon ground nutmeg
04 - 1 teaspoon baking soda
05 - 2 cups white flour
06 - 1/2 teaspoon ground ginger
07 - 1 1/2 teaspoons baking powder

→ Wet Ingredients

08 - 3 large eggs
09 - 1 cup white sugar
10 - 1/2 cup softened butter (unsalted)
11 - 1 teaspoon vanilla extract
12 - 1/2 cup brown sugar
13 - 1/2 cup crushed and drained pineapple
14 - 2 cups shredded fresh carrots
15 - 1/2 cup finely chopped walnuts, if using

→ Cream Cheese Frosting

16 - 8 oz softened cream cheese
17 - 2 cups powdered sugar
18 - 1/4 cup butter softened
19 - 1 teaspoon vanilla

# Steps:

01 - Set your oven to 350°F (175°C) to preheat. Coat a 9x13-inch pan with butter and flour.
02 - Stir together cinnamon, flour, salt, nutmeg, baking powder, ginger, and baking soda in a bowl.
03 - Cream the butter and sugars until airy, then toss in eggs one by one. Mix in vanilla. Slowly add dry ingredients. Fold in the carrots, pineapple, and nuts last.
04 - Put the batter into the pan, spread it evenly, and bake for 30-35 minutes. Let it cool fully before frosting.
05 - Whip the cream cheese and butter until smooth. Mix in powdered sugar and vanilla until creamy. Spread all over the cooled cake.

02 - Drain your pineapple well or the batter might get too soggy.
