Cheesy Green Chile Rice Casserole (Print-Friendly Version)

Classic side dish featuring layers of rice, green chiles, sour cream, and plenty of melted cheese.

# Ingredients:

01 - 2 cups sour cream
02 - 4 oz diced fire roasted green chiles
03 - 3 cups cooked rice
04 - 8 oz Pepper Jack cheese, shredded
05 - 2 oz cheddar cheese, shredded
06 - Cilantro, parsley, or jalapenos for garnish (optional)

# Steps:

01 - Preheat oven to 350°F (175°C).
02 - Lightly spray an 8-inch square casserole dish with cooking spray.
03 - Combine sour cream and diced green chiles in a small bowl. Set aside.
04 - Spoon 1 cup of rice into the bottom of the casserole dish. Spread one-third of the sour cream mixture on top of the rice. Top with one-third of the shredded pepper jack cheese. Repeat layers two more times.
05 - Cover with aluminum foil and bake for 20 minutes. Uncover and bake for an additional 10 minutes.
06 - Serve immediately.
