Preheat your oven to 375°F (190°C). Grease an 8×8-inch baking dish with butter or nonstick spray to prevent sticking.

In a large mixing bowl, combine diced apples, granulated sugar, cornstarch, cinnamon, and nutmeg. Mix until the apples are evenly coated.

Open the cinnamon roll cans and set aside icing packets. Slice each roll into ¼-inch thick rounds. Lightly flour a surface and flatten each round into a 3–4 inch disk.

Place a layer of flattened cinnamon rolls at the bottom of the greased pan. Spread half the spiced apple mixture evenly, then drizzle 2–3 tablespoons of caramel sauce. Repeat for a second layer with the remaining ingredients. Finish with a top layer of cinnamon rolls and drizzle the remaining caramel sauce.

Cover the baking dish tightly with foil to help soften the apples and bake the cinnamon rolls. Bake for 30 minutes.

Remove the foil and bake uncovered for another 10 minutes to allow the top to become golden brown and slightly crispy.

Let the dish cool for 15 minutes before drizzling the reserved icing packets over the top in ribbons or swirls.

Slice into 9 squares and serve warm. Enjoy as-is or pair with vanilla ice cream or whipped cream.
