Cheesecake Banana Bread (Print Version)

# Ingredients:

→ Banana Bread Batter

01 - 1 cup mashed bananas (about 2 ripe, big ones)
02 - 1/2 teaspoon baking soda
03 - 1/2 teaspoon baking powder
04 - 1 cup regular flour
05 - 1/4 cup coconut oil (melted)
06 - 1/4 cup sugar
07 - 1/2 cup packed brown sugar
08 - 1/4 cup sour cream
09 - 2 teaspoons vanilla extract
10 - Just a little pinch of salt (optional)
11 - 1 large egg

→ Cream Cheese Filling

12 - 4 ounces cream cheese, softened to room temp
13 - 1 large egg
14 - 3 tablespoons regular flour
15 - 1/4 cup sugar

# Instructions:

01 - Turn your oven to 350°F. Coat a 9x5 pan with butter, grease spray, or flour it lightly.
02 - Mix the egg, sugars, coconut oil, sour cream, and vanilla using a whisk. Stir in the bananas, then fold in the dry ingredients (flour, baking soda, baking powder, and optional salt) gently until it’s combined.
03 - Whisk the cream cheese, egg, sugar, and flour well until it’s nice and smooth.
04 - Start with pouring about two-thirds of the batter into the loaf pan. Spread the cream cheese mix gently over it, then add the rest of the batter on top.
05 - Bake for 48 to 50 minutes until the top’s set and golden. If it’s browning quicker than expected, cover it lightly with foil after about 30 minutes.

01 - Fine to keep out on the counter for up to 1 week
02 - Store in the freezer for a half-year max
03 - You can swap for low-fat cream cheese or sour cream, and it’ll work too
