Turn your oven to 350°F. Coat a 9x5 pan with butter, grease spray, or flour it lightly.

Mix the egg, sugars, coconut oil, sour cream, and vanilla using a whisk. Stir in the bananas, then fold in the dry ingredients (flour, baking soda, baking powder, and optional salt) gently until it’s combined.

Whisk the cream cheese, egg, sugar, and flour well until it’s nice and smooth.

Start with pouring about two-thirds of the batter into the loaf pan. Spread the cream cheese mix gently over it, then add the rest of the batter on top.

Bake for 48 to 50 minutes until the top’s set and golden. If it’s browning quicker than expected, cover it lightly with foil after about 30 minutes.
