01 - 1 lb white fish fillets (e.g., cod or tilapia)
02 - ½ cup all-purpose flour
03 - ½ cup cornstarch
04 - 1 teaspoon paprika
05 - ½ teaspoon garlic powder
06 - ½ teaspoon salt
07 - ½ teaspoon black pepper
08 - ¾ cup cold sparkling water
09 - Vegetable oil, for frying

10 - 2 cups shredded green cabbage
11 - 1 cup shredded purple cabbage
12 - ¼ cup chopped fresh cilantro
13 - Juice of 1 lime
14 - 2 tablespoons mayonnaise
15 - 1 tablespoon honey
16 - Salt and pepper, to taste

→ Sauce

17 - ½ cup sour cream
18 - 2 tablespoons mayonnaise
19 - 1 tablespoon lime juice
20 - ½ teaspoon garlic powder
21 - ¼ teaspoon cumin
22 - Salt, to taste

→ Taco Assembly

23 - 8 small corn or flour tortillas
24 - Lime wedges, for serving
25 - Extra chopped cilantro, for garnish

# Steps:

01 - In a large bowl, mix green and purple cabbage, cilantro, lime juice, mayonnaise, and honey. Season with salt and pepper. Toss well and refrigerate until needed.
02 - In a small bowl, whisk together sour cream, mayonnaise, lime juice, garlic powder, cumin, and salt. Chill until ready to serve.
03 - Pat the fish fillets dry and cut them into taco-sized strips. In a medium bowl, whisk together the flour, cornstarch, paprika, garlic powder, salt, and pepper. Gradually pour in cold sparkling water while stirring to make a smooth, slightly thick batter. Heat 2 inches of oil in a skillet to 175°C (350°F). Dip each fish piece into the batter, allowing any excess to drip off, and fry in batches for 2–3 minutes per side, or until golden and crispy. Drain on paper towels.
04 - Lightly toast each tortilla on a dry skillet or open flame until warm and pliable.
05 - Place crispy fish pieces into the center of each warm tortilla. Add a handful of slaw on top, drizzle with sauce, and garnish with extra cilantro or your preferred toppings.
