Orange Crispy Beef (Print Version)

# Ingredients:

→ Crunchy Beef

01 - 3 tablespoons cooking oil
02 - 500g (1.1 lbs) sirloin beef, sliced into thin strips
03 - 2 tablespoons cornstarch
04 - A pinch of salt and black pepper

→ Veggies

05 - 1 large onion, sliced thinly
06 - 1 red bell pepper, cut into strips

→ Citrus Sauce

07 - Grated rind of half an orange
08 - Fresh juice from 2 oranges (about 120ml or ½ cup)
09 - 5 tablespoons of soy sauce
10 - 3 tablespoons granulated sugar
11 - 2 cloves of garlic, crushed
12 - 1 teaspoon of vinegar made from rice
13 - 1 teaspoon of prepped ginger paste

→ Optional Sauce Thickener

14 - 1 tablespoon cornstarch stirred into 3 tablespoons of cold water

→ To Serve

15 - Cooked rice
16 - 4 green onions (scallions), cut diagonally

# Instructions:

01 - Use a paper towel to dry the beef. Combine the cornstarch with salt and pepper, then coat the beef strips with the mixture.
02 - Pour oil into a hot wok over high heat. Fry the beef for about 5–6 minutes until it's crispy, stirring only slightly. Scoop it out with a slotted spoon and let it drain on a paper-lined plate or bowl.
03 - Turn down to medium heat. Toss the onion and red pepper in for 2–3 minutes, leaving them slightly crunchy.
04 - Simply combine the orange zest, orange juice, soy sauce, sugar, garlic, rice vinegar, and ginger paste together.
05 - Pour the sauce onto the cooked veggies and let it bubble. Reintroduce the crispy beef to the mix and heat everything together. If needed, stir in the cornstarch mix to make the sauce thicker. Serve over rice and sprinkle with green onions.

02 - You can swap soy sauce with tamari for a gluten-free version.
03 - Pop the beef in the freezer for 10 minutes before cutting—it’ll make slicing way easier.
