Croissant Sandwich (Print Version)

# Ingredients:

→ For the Spread

01 - 2 tablespoons of salted butter
02 - 2 tablespoons of dijon mustard
03 - 2 tablespoons of honey

→ For the Sandwiches

04 - 4 big croissants
05 - 8 pieces of cooked bacon
06 - 1/2 pound of ham, sliced from the deli
07 - 8 slices of cheese (like baby swiss, cheddar, gouda, etc.)

→ For the Eggs

08 - 5 large eggs
09 - A splash of milk
10 - Salt and pepper to taste
11 - 1 tablespoon of butter
12 - Optional: fresh chives for topping

# Instructions:

01 - Set your oven to 350°F and let it heat up.
02 - In a tiny bowl, mix together the mustard, butter, and honey. Microwave it for about 20 seconds so the butter melts, and then stir until smooth.
03 - Using a sharp, serrated knife, cut the croissants in half horizontally. Spread the honey dijon mixture evenly across the inside surfaces.
04 - On the bottom half of each croissant, layer a slice of cheese, followed by deli ham, bacon, and one more slice of cheese. Place the croissant tops back on and arrange them on a baking sheet.
05 - Pop them in the oven and bake for 10-15 minutes. You’ll know they’re ready when the cheese is gooey and the croissants are golden.
06 - While baking, whisk together the eggs, milk, salt, and pepper in a bowl. Warm up some butter in a nonstick pan over medium heat and gently cook the eggs, stirring, until softly scrambled. This should take about 2-3 minutes.
07 - Take the croissants out of the oven. Add a portion of scrambled eggs to each sandwich. Sprinkle with fresh chives if you’re feeling fancy before serving.

01 - You can make these ahead of time and keep them in the fridge overnight.
02 - These freeze really well for up to a month.
