Croissant Cheese Sandwiches (Print Version)

# Ingredients:

01 - 2 tablespoons honey
02 - 2 tablespoons dijon mustard
03 - 2 tablespoons salted butter

→ Sandwich Base

04 - 8 slices cooked bacon
05 - 8 slices cheese (cheddar, gouda, baby swiss, etc.)
06 - 1/2 pound deli-sliced ham
07 - 4 large croissants

→ Egg Mixture

08 - Fresh chives for optional garnish
09 - 1 tablespoon butter
10 - Salt and pepper
11 - Splash of milk
12 - 5 large eggs

# Instructions:

01 - Get your oven ready by heating it to 350°F.
02 - Mix the honey, butter, and mustard in a small bowl. Heat it in the microwave for 20 seconds or so, until the butter melts, then stir it up.
03 - Using a serrated knife, carefully slice your croissants in half. Spread the dijon mixture onto the open sides.
04 - Start stacking: lay cheese, ham, bacon, and one more slice of cheese on the bottom half of the croissant. Pop the top half on and place all sandwiches on a baking sheet.
05 - Put the sandwiches in the oven for 10 to 15 minutes, till the cheese is bubbling and the croissants turn crispy and golden.
06 - As sandwiches bake, whisk eggs together with milk, salt, and pepper. Warm butter in a nonstick skillet over medium heat and scramble the eggs, stirring constantly for 2-3 minutes.
07 - Take sandwiches out of the oven. Spoon scrambled egg onto each one and sprinkle with chopped chives if you'd like.
