Get your oven ready by heating it to 350°F.

Mix the honey, butter, and mustard in a small bowl. Heat it in the microwave for 20 seconds or so, until the butter melts, then stir it up.

Using a serrated knife, carefully slice your croissants in half. Spread the dijon mixture onto the open sides.

Start stacking: lay cheese, ham, bacon, and one more slice of cheese on the bottom half of the croissant. Pop the top half on and place all sandwiches on a baking sheet.

Put the sandwiches in the oven for 10 to 15 minutes, till the cheese is bubbling and the croissants turn crispy and golden.

As sandwiches bake, whisk eggs together with milk, salt, and pepper. Warm butter in a nonstick skillet over medium heat and scramble the eggs, stirring constantly for 2-3 minutes.

Take sandwiches out of the oven. Spoon scrambled egg onto each one and sprinkle with chopped chives if you'd like.
