Use a medium bowl to toss together oats, white chocolate, and pastel M&Ms.

In a smaller bowl, blend honey and peanut butter until it’s smooth. Stir in vanilla and salt, but only if you’d like.

Pour the peanut butter mixture into the oats and candy mix. Stir well to make sure the mixture is coated and sticks together when pressed.

Roll portions of the mix into small balls, about 1 inch big. If they’re too sticky, pop the mix in the fridge for 10–15 minutes to make it easier to handle.

If you’d like, roll your formed balls in shredded coconut for a fun coating.

Place the rolled bites onto a plate or tray, then let them chill in the fridge for half an hour so they firm up.

Have some right away, or store them in an airtight box and keep them in the fridge for up to a week.
