Fried Pork Chops Gravy (Print Version)

# Ingredients:

→ Pork Chops

01 - 4 pork chops, boneless and about half an inch thick
02 - 1 cup plain flour
03 - A teaspoon each of garlic and onion powder
04 - 1 teaspoon smoked paprika
05 - Optional: 1/2 teaspoon of cayenne for heat
06 - Salt and pepper as you like it
07 - 2 large eggs, beaten
08 - Half a cup of milk
09 - Vegetable oil (about 1/2 cup) for frying

→ Bacon Gravy

10 - 4 slices of bacon, diced
11 - 2 tablespoons of flour
12 - 2 cups full-fat milk
13 - 1/2 tsp garlic powder
14 - Pepper and salt to taste

# Instructions:

01 - Mix the flour with smoked paprika, garlic and onion powders, cayenne, and a pinch of salt and pepper in a shallow plate. Whisk eggs with milk in another plate.
02 - Cover the pork chop in the flour mixture, dip it in the egg blend, and roll it back in the flour mix. Let them sit for 5-10 minutes so the coating stays put.
03 - Warm oil over medium heat in a big frying pan. Fry the pork chops on each side for 4-5 minutes until they're a golden brown, with an inside temp of 145°F. Drain on paper towels.
04 - Fry bacon bits in the same pan until crispy. Keep about 2 tablespoons of the bacon fat. Remove the bacon pieces and blend in the flour with the hot grease. Cook for a minute.
05 - Whisk milk slowly into the pan until the mixture has no lumps. Let it simmer for a few minutes until it thickens. Add garlic powder, salt, pepper, and toss in the bacon bits.

# Notes:

01 - Rest the chops after breading so the coating stays on better when fried.
02 - If the gravy feels thick, stir in a splash of chicken broth to loosen it.
03 - Pair them with mashed potatoes, collards, or green beans for a full meal.
