03 - 3 cups cold, day-old long-grain rice
04 - 1 cup halloumi, diced
05 - 3 slices ham with rosemary, cut into pieces
06 - 3 slices of salami, chopped
07 - 3 slices mortadella, diced

→ Vegetables and Herbs

08 - Romaine lettuce for plating
09 - 1/4 cup roasted red peppers, chopped small
10 - 1/4 cup basil leaves, sliced thin
11 - 1/4 cup banana peppers, diced small

→ Sauces and Oils

12 - Balsamic vinegar, plus extra for garnish
13 - 2 tablespoons soy sauce
14 - 2 tablespoons sesame oil
15 - Olive oil for frying

# Instructions:

01 - Warm olive oil in a hot pan. Toss in onion and let it cook for 5 minutes. After that, add halloumi cubes and let them fry until their edges turn golden, about 5 minutes.
02 - Throw all the diced meats into the pan. Stir them for 3-5 minutes until they've browned a little.
03 - Toss in the rice, stirring every now and then, and let it cook for another 5 minutes.
04 - Push the rice aside in the pan to make space. Crack the egg in the spot, scramble it, then mix it back into the rice blend.
05 - Mix in the rest of the ingredients with the rice. Let everything cook for 5 more minutes. Serve it up with lettuce on top and a drizzle of balsamic.

# Notes:

01 - Let your rice sit overnight for a better texture.
02 - Swap in Italian meats you love for a new taste.
03 - Perfect way to use any extra rice you’ve got.
