Bean Brownies (Print Version)

# Ingredients:

→ Base Ingredients

01 - 1 can of black beans (15 ounces/425g), washed and drained
02 - 3 big eggs
03 - 3 tablespoons of neutral oil, such as vegetable or canola
04 - 1 teaspoon of vanilla essence

→ Dry Ingredients

05 - ⅔ cup of sugar (120g)
06 - ¼ cup of cocoa powder, unsweetened (30g)
07 - ½ teaspoon of instant or fine coffee (optional)
08 - ¼ teaspoon of salt
09 - ½ teaspoon of baking powder

→ Add-ins

10 - ½ cup of semi-sweet chocolate chips (60g)

# Instructions:

01 - Set the oven to 350°F (176°C). Blend the black beans in a food processor until smooth. Mix the pureed beans in a large bowl with the eggs, oil, and vanilla.
02 - Stir together the cocoa, sugar, baking powder, salt, and (if using) coffee in another bowl. Combine this with the wet ingredients, then fold in the chocolate chips.
03 - Line and grease an 8x8 or 9x9 inch tray with parchment. Scoop the mixture into the pan. Bake for 30-40 minutes, or until the edges look done and the center seems mostly firm.
04 - Let the brownies cool down completely before you slice them.

# Notes:

01 - Doubling the ingredients will make thicker brownies
02 - Store these in the fridge for up to a week
03 - They can go in the freezer for up to three months
