Comforting Chicken Bake (Print Version)

# Ingredients:

→ Main Ingredients

01 - ⅛ teaspoon of dried thyme
02 - ½ cup of milk
03 - 1 cup of cheddar, shredded
04 - 12 ounces of frozen mixed veggies, partially thawed
05 - 2–3 cups diced chicken, pre-cooked
06 - ¼ cup of crispy bacon bits
07 - A single can (10.5 oz) of condensed chicken soup
08 - 3 cups thawed, frozen hash browns (around 8 oz)

→ Topping

09 - ½ cup of shredded cheddar cheese
10 - 12–14 crushed Ritz crackers (roughly half a sleeve)

# Instructions:

01 - Set your oven to 400°F (200°C).
02 - Grab a big bowl and toss in the hash browns, chicken, bacon, cheddar cheese, veggies, chicken soup, milk, and thyme. Stir it up till it's combined.
03 - Coat a 7x11-inch baking pan (or one close in size) with a little grease. Spread the mixture out evenly across the dish.
04 - In a smaller bowl, mix the crushed Ritz crackers with the shredded cheddar. Scatter this over the top of the casserole evenly.
05 - Cover the dish with foil and bake for half an hour.
06 - Take the foil off and let it bake for another 15 minutes, or until it's bubbling and the top looks golden.
07 - After pulling it from the oven, let it rest for 10 to 15 minutes before digging in. Enjoy every bite!

# Notes:

01 - Leftover rotisserie chicken works great for this, or you could poach some chicken if you're in a pinch.
02 - If you like heat, toss in some red pepper flakes or a splash of hot sauce for a kick.
03 - This can freeze easily. Just stop before baking, wrap it up tight, and store it in the freezer for up to 3 months.
