Use a knife to spread softened butter onto one side of each slice of bread.

Take one of the bread slices and, on the non-buttered side, layer on the mascarpone cheese. Lay out banana slices evenly on top. Drizzle the honey across. Place the other slice of bread on top, butter side out.

Heat up a non-stick pan over medium-high heat. Pop the sandwich onto the pan and grill it for about 2-3 minutes per side, or until it’s golden and crunchy.

Take it off the heat, slice it in half, and enjoy it while it’s still warm and delicious.
