Sausage Veggie Soup (Print Version)

# Ingredients:

01 - 1 tbsp olive oil.
02 - A pound of Italian sausage.
03 - 1 onion, diced small.
04 - 3 cloves garlic, minced up.
05 - Two chopped-up carrots.
06 - Two stalks of celery, diced.
07 - 4 cups chicken stock.
08 - A 14.5 oz can of diced tomatoes.
09 - 1 cup of heavy whipping cream.
10 - 2 cups fresh spinach leaves.
11 - 1 cup grated Parmesan cheese.
12 - 1 tsp dried Italian herbs.
13 - Pinch of red pepper flakes (1/4 tsp).
14 - Salt and black pepper, add to preference.

# Instructions:

01 - Heat the oil in a pot and cook the sausage till it's browned. Take it out and set aside for later.
02 - Toss the veggies into the pot and cook them till softened. Add garlic and cook for just about a minute.
03 - Pour in the chicken broth, tomatoes, spices, and browned sausage. Let it cook for around 15 minutes.
04 - Mix in the Parmesan and cream. Stir in spinach until it wilts, then season to fit your taste.

# Notes:

01 - Use spicy sausage if you want some extra kick.
02 - Cook your pasta on the side if you plan to add it.
