Louisiana Dirty Rice Sausage (Print-Friendly Version)

# Ingredients:

→ Meat

01 - 1 lb ground beef
02 - 1 lb ground pork sausage

→ Base Ingredients

03 - 4-5 cups cooked rice, prepared with chicken broth
04 - 2 cups chicken broth

→ Vegetables

05 - ¾ cup green bell pepper, diced
06 - ¾ cup yellow onion, diced
07 - ¼ cup celery, diced

→ Binders

08 - ¼ cup flour
09 - 1 tablespoon bacon grease or cooking oil

→ Herbs and Spices

10 - 3 bay leaves
11 - 2 tablespoons fresh parsley, chopped
12 - 1 tablespoon dried oregano
13 - 2 teaspoons dried thyme
14 - 2 teaspoons minced garlic
15 - 1 ½ teaspoons salt
16 - 1 teaspoon chili powder
17 - ½ teaspoon ground black pepper
18 - ¼ teaspoon cayenne pepper

# Steps:

01 - In a large skillet, heat bacon grease or cooking oil. Add ground beef and sausage and brown.
02 - As meat begins to brown, add diced bell pepper, onion, and celery.
03 - When meat is fully browned, stir in herbs and spices, except parsley. Mix well. Add flour, ensuring it coats the meat evenly.
04 - Add broth and bay leaves. Scrape the bottom of the pan to loosen browned bits. Simmer for 5-8 minutes.
05 - Fold in rice and parsley. Simmer for 5 more minutes. Serve.

# Notes:

01 - Traditional Dirty Rice uses chopped chicken livers for added flavor. This recipe substitutes bacon grease for richness. Mushrooms or oysters can also be used as alternative ingredients.
