Peach French Toast Delight (Print Version)

# Ingredients:

→ For the French Toast

01 - 1 tablespoon of vanilla essence
02 - 2 medium-sized eggs
03 - 2 thick slices of brioche, challah, or farmhouse bread
04 - 2 tablespoons of granulated sugar
05 - 1 cup of full-fat milk

→ For the Peaches

06 - 1 teaspoon of cinnamon powder
07 - A can of peaches soaked in syrup
08 - 1 tablespoon of cornflour
09 - 2 tablespoons of regular sugar

→ For the Cobbler Topping

10 - Dark brown sugar, 1 and a half tablespoons
11 - 6 digestive biscuits (around 100g)
12 - 1 full teaspoon of cinnamon
13 - 60g of butter, melted

→ For Serving

14 - Optional: vanilla ice cream
15 - Pre-made caramel sauce

# Instructions:

01 - Crack the eggs into a bowl and whisk them with the sugar, milk, and vanilla. Soak each bread slice thoroughly in this mixture, covering both sides. Cook in a frying pan on low heat, flipping until it's golden and set on both sides.
02 - Warm the peaches and their liquid in a pan but hold back 1/4 cup of the syrup. Stir the reserved syrup and cornflour together until smooth (strain it if there are any clumps). Pour this mixture, along with the cinnamon and sugar, into the pan with the peaches. Gently simmer until the sauce thickens a bit, then turn off the heat.
03 - Smash the biscuits into fine crumbs, then combine with the melted butter, sugar, and cinnamon. Stir until all the crumbs are evenly coated and stick together slightly.
04 - Set up your French toast slices on serving plates. Layer the warm peaches on top, sprinkle the crumbly cobbler mix over that, and add a spoonful of vanilla ice cream if you'd like. Finally, drizzle the caramel sauce over everything.

01 - Can’t find digestive biscuits? Graham crackers are a fine substitute.
