Pecan Pie Cake (Print-Friendly Version)

This sweet snack cake has all the goodness of pecan pie, with brown sugar and toasted pecans making it taste amazing.

# Ingredients:

01 - 1 1/4 cups flour (all-purpose)
02 - 2 cups pecans, chopped
03 - 3/4 cup vegetable oil
04 - 4 large eggs
05 - 1 tablespoon extract (vanilla)
06 - 2 cups brown sugar, packed tight
07 - A pinch less than 1 teaspoon salt
08 - Powdered sugar (if you want, for topping)

# Steps:

01 - Set your oven to 350°F and grease up a 13x9 pan for baking.
02 - Beat the eggs, brown sugar, and vanilla together for two minutes until bubbly and smooth. Add the oil and salt, then gently stir in the flour.
03 - Mix in the pecans, then pour the batter into the greased pan evenly.
04 - Pop it into the oven and bake for about 30-40 minutes. Watch for it to turn golden at the edges and set in the middle.
05 - Let everything cool in the pan before slicing into 24 squares. Want extra flair? Sprinkle some powdered sugar on top if you'd like.

01 - Swap out the pecans for walnuts or even almonds if you prefer.
02 - It works fine with either light or dark brown sugar.
