Turn your oven on and bake the tater tots following the package directions. They should come out golden and crunchy.

Cook the ground beef in a skillet over medium heat, adding a little salt and pepper. Once browned, drain off any fat left in the pan.

Get a big bowl and mix cooked ground beef, smashed tater tots, half of both Monterey Jack and cheddar cheeses until it looks well blended.

Either pop the tortillas into the microwave for 10-15 seconds or warm them in a skillet to make rolling them easier.

Spread the filling down the middle of each tortilla. Pour on some chipotle sauce and add a little sour cream.

Fold the edges in, bring up the bottom, then roll up each tortilla tightly to hold everything inside.

Place the wrapped burritos in a dish, sprinkle the leftover cheese over them, and bake for 5-10 minutes until the cheese is bubbly.

Pull the dish out and top with chopped tomatoes, green onions, and cilantro if you like. Serve warm with extra sour cream and chipotle sauce.
