Cheesy Potato Burritos (Print Version)

# Ingredients:

→ Filling Ingredients

01 - 1 lb of ground beef (feel free to swap with turkey or plant-based meat).
02 - 2 cups of frozen tater tots.
03 - 1 cup of Monterey Jack cheese, shredded.
04 - 1 cup of shredded cheddar cheese.
05 - Half a cup of sour cream.
06 - A quarter cup of Taco Bell chipotle sauce (adjust for spiciness).
07 - Salt and pepper, as much as you like.

→ Tortillas

08 - 6 soft, large flour tortillas.

→ Add-ons

09 - Freshly diced tomatoes.
10 - Chopped cilantro leaves.
11 - Sliced green onions.
12 - Extra sour cream for topping.
13 - Extra chipotle sauce for a kick.

# Instructions:

01 - Turn your oven on and bake the tater tots following the package directions. They should come out golden and crunchy.
02 - Cook the ground beef in a skillet over medium heat, adding a little salt and pepper. Once browned, drain off any fat left in the pan.
03 - Get a big bowl and mix cooked ground beef, smashed tater tots, half of both Monterey Jack and cheddar cheeses until it looks well blended.
04 - Either pop the tortillas into the microwave for 10-15 seconds or warm them in a skillet to make rolling them easier.
05 - Spread the filling down the middle of each tortilla. Pour on some chipotle sauce and add a little sour cream.
06 - Fold the edges in, bring up the bottom, then roll up each tortilla tightly to hold everything inside.
07 - Place the wrapped burritos in a dish, sprinkle the leftover cheese over them, and bake for 5-10 minutes until the cheese is bubbly.
08 - Pull the dish out and top with chopped tomatoes, green onions, and cilantro if you like. Serve warm with extra sour cream and chipotle sauce.

# Notes:

01 - Want it spicier? Mix in diced jalapeños or a pinch of red pepper flakes.
02 - Wrap them in foil and freeze for later. Warm in the microwave or oven when you're ready to eat.
