Rotel Chicken Pasta (Print Version)

# Ingredients:

→ Staple Ingredients

01 - 3 cups shredded cheese (try Mexican blend or similar)
02 - 1 cup sour cream
03 - 2 (10.5 oz) cans of cream of chicken soup with herbs
04 - 1 (10 oz) can of Rotel diced tomatoes with chilies
05 - 4 cups cooked rotisserie chicken, pulled apart or cut
06 - 12 oz dry spaghetti noodles
07 - 1 cup chicken broth, split into portions
08 - 4 minced garlic cloves

→ Spices and Garnishes

09 - ½ teaspoon ground black pepper
10 - A sprinkle of dried parsley for topping
11 - ½ teaspoon seasoning salt
12 - ½ teaspoon crushed red pepper flakes
13 - 3 tablespoons cajun spice blend, split in portions

→ DIY Cajun Spice Mix (Optional)

14 - 2 tablespoons smokey paprika
15 - 1 tablespoon garlic powder
16 - ½ teaspoon dried thyme leaves
17 - 1 tablespoon ground cayenne
18 - 2 teaspoons onion powder
19 - 1 teaspoon dried oregano
20 - 1 teaspoon salt
21 - 1 teaspoon ground black pepper

# Instructions:

01 - Set oven to 375°F to preheat. Get a big pot of water boiling, toss in the spaghetti, and cook it following the instructions on the box.
02 - Remove the chicken from the bones and throw it in a big bowl. Add ¼ cup chicken broth to moisten it and sprinkle about 2 tablespoons of cajun spices over it. Make sure it’s all mixed and coated evenly.
03 - In a separate bowl, throw together sour cream, cream of chicken soup, garlic, Rotel (don’t drain it), 1 tablespoon of cajun seasoning, pepper, seasoned salt, and red pepper flakes. Whisk until smooth.
04 - Take the warmed-up ¾ cup chicken stock and stir it slowly into the sauce blend you just made.
05 - Grab a 9×13 baking dish and mix in your cooked spaghetti, spiced chicken, sauce mixture, and half the cheese. Use kitchen tongs to make sure everything is evenly spread out.
06 - Spread the leftover cheese on top. Sprinkle with parsley. Put a layer of foil on top, sprayed with nonstick oil first. Bake for 25 minutes, uncover, then bake 10 more minutes until bubbly and golden at the edges.

# Notes:

01 - Store-bought cajun spice mix is fine if you don’t make your own.
02 - Heat leftovers with small splashes of chicken broth to bring the pasta back to life.
03 - Super handy for making ahead when the week’s packed.
