Egg Bites with Sausage (Print Version)

# Ingredients:

01 - 1 pack (7 oz) of chopped green chilis
02 - 2 teaspoons of powder for baking
03 - 1 and 3/4 cups all-purpose flour
04 - 2 tablespoons melted salted butter
05 - 1 1/2 cups shredded sharp cheddar cheese
06 - 6 big eggs
07 - 1 pound breakfast sausage, ground

# Instructions:

01 - Set your oven to 400°F to preheat.
02 - Warm a nonstick skillet over medium heat. Toss in the sausage and cook for about 5 minutes, crumbling it as it cooks until all the pink is gone. Turn off the heat and let it cool down for 10 minutes.
03 - In a big bowl, mix together the sausage, the eggs, and the butter. Whip it up well to beat the eggs thoroughly.
04 - Sprinkle in the flour and the baking powder. Mix it until everything combines and there are no flour lumps left.
05 - Carefully add in the shredded cheddar and chopped green chilis. Stir gently until these are evenly mixed into the batter.
06 - Scoop out 12 big dollops of the mix with a cookie scoop or spoon and lay them on a baking sheet. Bake them for around 10 minutes until the centers are just firm.

01 - Keep leftovers in the fridge for up to 4 days
02 - Skip the green chilis if you prefer
03 - Overbaking can make them too dry—watch the time!
