Street-Style Noodles (Print Version)

# Ingredients:

→ Main Ingredients

01 - 1 tablespoon sesame oil
02 - 16 ounces of vermicelli noodles
03 - 1/2 pound of diced chicken
04 - 2 tablespoons canola oil
05 - 1/2 pound large shrimp

→ Seasonings

06 - 1/2 teaspoon table salt
07 - 1 teaspoon curry powder (mild)
08 - 1 teaspoon ground paprika
09 - 1 teaspoon white pepper

→ Vegetables

10 - 1 yellow onion, peeled
11 - 2 carrots, thinly sliced into strips
12 - 1 cup of thinly shredded red cabbage
13 - 10 cloves of garlic, finely minced
14 - 1/2 cup of chopped green onions
15 - 1 cup grape or cherry tomatoes

→ Sauce

16 - 1/4 cup oyster sauce
17 - 1 teaspoon spicy red chili paste
18 - 2 tablespoons soy sauce or tamari
19 - 2 tablespoons mirin (sweet rice wine)
20 - 2 tablespoons curry powder

→ For Topping

21 - Fresh cilantro leaves
22 - Crispy fried shallots

# Instructions:

01 - Warm your wok over medium heat, adding 2 tablespoons of canola oil to coat.
02 - In a saucepan, boil 3 cups of salted water. Cook noodles for a quick 3 minutes, then drain and rinse under cool running water. Toss them with sesame oil and set aside for later.
03 - Split the chicken and shrimp into different bowls. Mix white pepper, curry powder, paprika, and salt in a small dish. Sprinkle the seasoning mix evenly on the chicken and shrimp, dividing it between them.
04 - Put the chicken into the heated wok and stir-fry it for about 5 minutes. Toss in the shrimp and garlic, cooking for 3 more minutes until both are done. Remove them from the wok, but leave the wok as is.
05 - Drop 1 more tablespoon of canola oil into the empty wok. Add the prepared vegetables and stir-fry for roughly 5 minutes, letting them soften.
06 - Toss the noodles, chicken, and shrimp back into the wok. Stir everything gently, then add the sauce and make sure it coats everything nicely. Let it simmer for a few minutes before sprinkling on fried shallots and fresh cilantro.
