Creamy Swedish Meal (Print Version)

# Ingredients:

→ Meatballs

01 - Half a cup of diced yellow onion
02 - 2 cloves garlic, minced
03 - A large egg, beaten
04 - 2 tablespoons olive oil, split
05 - A third of a cup of milk
06 - Half a cup of panko breadcrumbs
07 - Three-quarters of a pound of ground beef (80% lean)
08 - Half a pound of ground pork
09 - A quarter cup of Parmesan cheese

→ Seasonings

10 - 1 teaspoon of salt
11 - A quarter teaspoon of black pepper
12 - A quarter teaspoon of nutmeg
13 - A quarter teaspoon of dried oregano
14 - A quarter teaspoon of ground allspice

→ Sauce

15 - 4 tablespoons of unsalted butter
16 - 4 tablespoons of flour
17 - 2 teaspoons of Worcestershire sauce
18 - Half a cup of sour cream, room temperature
19 - A cube of chicken bouillon
20 - 2 cups of beef stock
21 - 1 teaspoon parsley flakes
22 - 1 teaspoon Dijon mustard

# Instructions:

01 - Cook the onions and garlic in half the oil until softened, then let them cool.
02 - Mix together breadcrumbs, Parmesan, egg, milk, cooled onion mixture, and all seasonings. Gently combine with the meats.
03 - Shape into 1½-inch meatballs, then chill for at least 15 minutes or store overnight.
04 - Using the rest of the oil, brown the meatballs in small batches and set them aside once done.
05 - Whisk together butter and flour to make a roux. Slowly stir in the beef broth mixture. Gradually add the sour cream after tempering it with some warm sauce.
06 - Add the meatballs back to the sauce. Simmer for 10-15 minutes until they're cooked all the way through.

01 - This dish can be prepped in advance.
02 - Be sure to use sour cream with full fat.
03 - These meatballs freeze wonderfully for later.
