Sweet & Spicy Wings (Print Version)

# Ingredients:

→ Habanero-Mango Sauce

01 - 1 big mango, diced, peeled, and de-seeded
02 - 3 garlic cloves, chopped roughly
03 - 3 fresh habanero chilies
04 - 3 tablespoons lime juice (freshly squeezed)
05 - 2 tablespoons of white vinegar
06 - 3 tablespoons of pure maple syrup
07 - 1 teaspoon of salt
08 - 1/2 teaspoon smoked paprika

→ Wings

09 - 10 bone-in wings, split into parts (flats and drumettes)
10 - 1/2 teaspoon salt
11 - 1/4 teaspoon cracked black pepper
12 - 1/2 teaspoon garlic powder
13 - 1/2 teaspoon smoked paprika
14 - 1 tablespoon baking powder (without aluminum)

# Instructions:

01 - Toss together the mango, peppers, garlic, vinegar, lime juice, maple syrup, salt, and paprika in a blender or processor. Whirl it up into a smooth paste.
02 - Dry the wings thoroughly. Mix the dry seasoning ingredients with the baking powder, then coat the wings evenly.
03 - Heat the oven to 425°F. Cover a baking sheet with foil, add a wire rack on top, and spray it lightly with cooking oil.
04 - Lay the wings, skin-side facing up, on the rack. Bake for 20 minutes, turn them over, cook another 10 minutes, and check for an internal temp of 160°F.
05 - Cool wings for around 5 minutes. Toss them in 1/3 cup of sauce and serve the rest on the side.

# Notes:

01 - Use seeds from 1 to 3 habaneros to adjust the heat level.
02 - Make the sauce ahead of time and keep it chilled.
03 - Ensure frozen wings are fully thawed.
