30-Minute Creamy Salmon (Print-Friendly Version)

# Ingredients:

→ Base

01 - 1 tablespoon olive oil
02 - 1/2 cup sun-dried tomatoes in oil, chopped
03 - 1 1/2 pounds salmon
04 - 3 cloves garlic, minced
05 - 1/2 medium yellow onion, diced

→ Sauce

06 - 1 cup curly kale, de-stemmed and chopped
07 - 1 cup heavy cream
08 - 3/4 cup freshly grated parmesan cheese
09 - 1/2 cup low sodium vegetable broth
10 - Salt and pepper to taste
11 - Fresh parsley for garnish

# Steps:

01 - Slice the salmon into 3-4 smaller portions working vertically.
02 - Heat oil in a large pan. Cook salmon, skin side down, for 5 minutes per side without flipping. Take it out once done.
03 - Brown the onion lightly. Toss in some garlic, the sun-dried tomatoes, and stir in the broth.
04 - Pour in the cream and sprinkle seasonings. Let it simmer softly, then mix in parmesan and kale.
05 - Place the salmon back in the pan, coat with sauce, and cook until the salmon hits 145°F inside.
