Zesty Shrimp Appetizer (Print Version)

# Ingredients:

→ Seafood

01 - 2 pounds of shrimp, already cooked, peeled, and cleaned

→ Fresh Produce

02 - 1/2 cup diced onion
03 - 1 cup tomatoes, chopped up
04 - 1 jalapeño, without seeds and chopped finely
05 - 1 cucumber, diced after peeling
06 - 1/4 cup fresh cilantro, chopped
07 - 2 avocados, cubed
08 - 1/2 cup lime juice, freshly squeezed

→ Sauces & Seasonings

09 - 1 cup of clam and tomato juice mix (like Clamato)
10 - 1/4 cup ketchup
11 - 1 tablespoon of hot sauce
12 - Salt and pepper to your taste

→ For Serving

13 - Tostadas or some tortilla chips
14 - Fresh cilantro sprigs for topping
15 - Lime slices to serve alongside

# Instructions:

01 - Mix the chopped onion and fresh lime juice in a small bowl. Leave it for 10 minutes. This makes the onions softer and less sharp in flavor.
02 - Take a big bowl and toss in shrimp, diced cucumber, tomatoes, cilantro, and minced jalapeño. Sprinkle some salt and pepper to season.
03 - Stir in the ketchup, clam-tomato juice, and hot sauce. Pour the lime-soaked onion mixture in too. Mix gently to combine everything.
04 - Right before you’re ready to eat, gently mix in the avocado cubes. Be careful not to make the avocado mushy.
05 - Cover the mix and chill for at least 1 hour in the fridge. Serve cold in bowls or tall glasses. Use lime wedges and extra cilantro for garnish, and have chips or tostadas on the side.

# Notes:

01 - Locally called 'Coctel de Camarones' in Mexico, this dish is especially loved by people living along the coast.
02 - Make it ahead of time! Let the mix chill for at least an hour, but add the avocado just before eating so it stays fresh.
03 - Prefer more or less heat? Adjust the jalapeño and hot sauce amounts depending on how spicy you want it.
