Apple Cinnamon Cookies with Caramel (Print-Friendly Version)

Tender cookies filled with apple bites and cinnamon, topped off with rich caramel and optional sea salt.

# Ingredients:

→ Cookie Dough

01 - 2 cups all-purpose flour
02 - 1 large egg
03 - 1 teaspoon vanilla extract
04 - 1 teaspoon baking soda
05 - 1/2 teaspoon salt
06 - 1 teaspoon ground cinnamon
07 - 3/4 cup packed brown sugar
08 - 1/2 cup granulated sugar
09 - 1 cup unsalted butter, softened
10 - 1 cup peeled, diced apples
11 - 1/2 cup chopped nuts (optional)

→ Caramel Drizzle

12 - 1/2 cup caramel topping
13 - Optional: sprinkle of sea salt

# Steps:

01 - Set the oven to 350°F (175°C) and get your baking sheets ready with parchment paper.
02 - Whip together the butter, brown sugar, and granulated sugar until it turns fluffy and smooth. Add the egg and vanilla and mix it in.
03 - Mix the flour, baking soda, cinnamon, and salt in a different bowl. Slowly blend this with your wet ingredients till it's just mixed.
04 - Carefully stir in the apple chunks and the nuts, if you've decided to use them.
05 - Scoop tablespoons of dough and drop them onto the baking sheets, keeping them 2 inches apart. Let them bake for 12-15 minutes, just until the edges are slightly golden.
06 - Let the cookies sit on the sheets for 5 minutes, then move them to a cooling rack. Once cool, pour on the caramel and a pinch of sea salt if you'd like.
