Set the oven to 350°F (175°C) and get your baking sheets ready with parchment paper.

Whip together the butter, brown sugar, and granulated sugar until it turns fluffy and smooth. Add the egg and vanilla and mix it in.

Mix the flour, baking soda, cinnamon, and salt in a different bowl. Slowly blend this with your wet ingredients till it's just mixed.

Carefully stir in the apple chunks and the nuts, if you've decided to use them.

Scoop tablespoons of dough and drop them onto the baking sheets, keeping them 2 inches apart. Let them bake for 12-15 minutes, just until the edges are slightly golden.

Let the cookies sit on the sheets for 5 minutes, then move them to a cooling rack. Once cool, pour on the caramel and a pinch of sea salt if you'd like.
